Cheesecake Crust - from Andrea Frankel
1 cup almond flour
1.25 sticks of butter
1/4 cup of Splenda
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract
1/4 teaspoon cinnamon
Mix together and spread on bottom of cheesecake pan.
Try adding a teaspoon of xantham gum, guar gum, notSugar, or notStarch. You might need to sprinkle a couple teaspoons of water over the mixture to activate the gums.
You can also try adding an egg yolk to bind things together. Using
the whole egg, or just the egg white, tends to produce something closer
to concrete than shortbread, in my experience!
