Allisonís Middle East Salad Dressing

Olive oil (about 1/4 cup)
2 cloves garlic, smashed and minced
Juice of one lemon
1-2 tsp. dried mint, crushed, or 2 T finely minced fresh mint leaves

Mix, and let sit for a few minutes for flavours to blend.  Great on tomato/cucumber/onion only salads.
