Jenís Cheese Sauce

2 tbsp. Butter
2 tbsp. flour (or Soy flour)
1 tsp. dry mustard
1/4 tsp. salt
Dash of pepper
1 C. heavy cream (could use 1/2 Cream & 1/2 water)
1 C. shredded sharp cheese (about 4 oz.)
5 drops hot pepper sauce

Heat butter until melted. Blend in flour, mustard, salt and pepper.  Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remover from heat.  Stir in cream. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese and pepper sauce.  Cook and stir over low heat until cheese is melted. Pour this over a whole head of cooked cauliflower and sprinkle with paprika. A pretty and delicious dish.
